Shepherd's Pie

I love Shepherd's pie. Drew, not so much. This was my second attempt to make Drew fall in love with this cozy casserole. Did it work?

The only consolation to cold weather (besides Christmas) is a warm meal. I am not a fan of the cold but I am a fan a cozy winter recipe.


Recipe:


Mashed Potatoes:

2 Russet potatoes

2 Yukon potatoes

Bring water to a boil then add potatoes with salt

Cook until soft (about 15 minutes)

Drain and return to pan

(I like to cook them a little to remove extra water)

Add salt and pepper to taste

2 tablespoons butter

1 tablespoon sour cream

Blend

Add 1 egg yolk

2 tablespoons milk*

Blend

Add more salt or pepper as needed


*you always want to add milk after initially blending so they don't get soupy


Meat:

Add oil to a hot pan

Add 1/2 chopped onion

and 1 garlic clove

Cook until tender

Add 3 large chopped carrots

Cook until carrots soften

Add ground beef

Brown the meat stirring occasionally

Add about 1/3 cup peas

Stir in "Gravy" (I don't know what else to call it, roux sounds too fancy)

Add 2 tablespoons worcestershire sauce



"Gravy":

In a separate saucepan on medium heat

Melt 1/4 cup butter

Whisk with 1/4 cup flour

Continue whisking until smooth

Add 1 can of diced tomatoes and a little water

Continue whisking until incorporated


In a large casserole dish add the meat mixture and spread evenly

Spoon on mashed potatoes then spread

Use a fork to "rough up" your potatoes


Bake at 400 for 20 minutes then broil on high for 5 minutes




So! Did Drew like it?

After adding ketchup he did but it still isn't his favorite. More leftovers for me though!
